Expansion and Contraction

All Butcher Blocks are at a moisture content of 8-12% when fabricated at the factory. Occasionally the blocks may take on additional moisture while being transported, especially in the spring and fall of the year, and slight warp age may occur. The block may expand as much as 3/16” every 4'. The wider the block, the greater the expansion. This is only temporary, once your top has become adjusted to its new surroundings, the moisture content will equalize and the panel may straighten out.

The block will never change in length, only the width expands and contracts. Measure your block prior to installation to determine if it has changed in width. If it has changed, it would be advisable to allow the block to become equalized to the surrounding atmosphere. Under normal conditions the block will return to the original dimension during the winter months and will expand during the summer months when the humidity is greater. In areas where temperatures drop to 15 or lower in the winter, the indoor humidity can drop to as low as 10% relative humidity. At that low relative humidity below 35 % or above 45%.
A  25” block can shrink as much as 1/8”. Be
sure to make allowances for this dimensional change.

Warping is caused by the expansion of either the top or bottom surface. This condition is easily corrected by placing the block on the cabinet bases and drawing the block down to a level position by attaching screws. All counter blocks should be attached to bases on or at least near all four corners.

Should the warp be too severe to fasten down, allow both sides of the block to be exposed to the same atmosphere. This is a temporary condition. The warp age will be corrected as the moisture content of the block is equalized on both top and bottom surfaces.

#1 Edge Grain, Face-Wood Plank and End Grain (Pieces) for our Butcher Block  counter tops offer a beautiful warm look and are available in a wide range of wood colors. How do you clean a natural oil finish butcher block?
To clean a food grade Mineral Oil, Rosemary and Lemon extract and Bees Wax finished butcher block, first scrape loose with a steel scraper or spatula any heavy food particles or foreign matter that may have adhered to the butcher block surface. After brushing or scraping all loose particles from the butcher block surfaces, take a dish cloth dipped in mild light soapy water, or water wash the butcher block surface. Wash the dish cloth in clear warm water, wring it out, and go over the butcher block surface again. Finish up by taking a dry cloth and thoroughly drying the butcher block surface. Do not leave water sitting on the surface of your butcher block, as this may cause water spotting. If liquid is left sitting on your natural oil finish butcher block, and spotting does occur, you can renew the surface of your butcher block by sanding with 120/220 grit sandpaper and applying a generous coat of food grade Mineral Oil, Rosemary and Lemon extract and Bees Wax.

How often will I need to re-oil my oil finish California Butcher Block?
For natural oil finish butcher blocks, we recommend that you re-oil all surfaces of your block everyday for 2 months and when new in the first year, then every time it looks dry to the eye. Because butcher block wood is a live material, extremes of humidity and dryness can swell and shrink your butcher block enough to cause seasonal checks to appear. This possibility, though remote, is an unavoidable condition of enjoying the beauty of a living material. Real wood with a check is still prettier than Formica without one! Cracks filled with cellulose filler of the right tint become practically invisible. Still, you can help preserve your butcher block by keeping your home humidified in winter and by refreshing your butcher block every 2 weeks with a generous coating of food grade Mineral Oil, Rosemary and Lemon extract and Bees Wax or natural mineral oil on all surfaces.

CALIFORNIA BUTCHER BLOCK
can be finished with non-toxic oils (when used for actual food preparation) or with conventional wood finishes (when used for its decorative effects). Oil finishes tend to darken over time and must also be re-applied from time to time as exposed, unfinished wood will degrade fairly rapidly. Conventional finishes do not darken but are much more susceptible to damage from cutting tools and
damage to them must be rapidly repaired or the underlying wood will be damaged. Note: That olive oil and vegetable oil are not suitable for finishing, as they will become rancid, giving the block a sour odor and foods an off taste.
